Baking Ideas! Berry Pie Easy Dessert
Four ingredient Berry Pie. If you're having a roast tomorrow and need an easy dessert to finish with - this is perfect!. It's ridiculously easy to make and only uses FOUR ingredients! Just add a couple of scoops of ice cream and you're done!. I hope you're having a lovely weekend - We've been working on the garden all day and I'm actually a bit sunburnt in october!!
Ingredients:
- 500g frozen berries. (The bag I had was a combination of blackberries, raspberries, blackcurrants and redcurrants)
- 2 tbsp caster sugar
- 350g shortcrust pastry (from a block)
- 1 egg beaten
How to Make Berry Pie:
- Heat the oven to 180C
- Roll out the pastry on a floured surface to rough circle, around 30cm across.
- Fold in around 3cm of the edge of the circle.
- Brush the pastry edge with the beaten egg and sprinkle with a little sugar.
- Place the base on a greased baking tray. Use the prongs of a fork to make lots of little indents all over the base of the pie, to stop it from rising.
- Bake in the oven for 10 minutes. Place the still frozen berries in a saucepan and stir in the sugar.
- Heat the fruit on a low to medium heat for 5 minutes, stirring reguarly. Pour the fruit into a sieve and leave for a couple of minutes to allow the juice to drain out (do not shake or they'll turn into mush! Remove the pie base from the oven.)
- Gently press the base down if it's risen up. Arrange the fruit in the middle. Gently nudging it up to the crust.
- Sprinkle the fruit with a little more sugar and bake for 7-10 minutes. Leave to cool for a bit as this will firm everything up. Serve with ice cream!
