#Dessert, Mini Panettone Clementine Cakes
Mini Panettone Clementine Cakes. I was going to do this with one big panettone, but these little ones are so cute!. They're so easy to make - literally takes minutes. There's enough cream that you can either make one big one or 4 small ones. I used chocolate chip Panettone as I love the chocolate/orange combo, but you can use plain. I have absolutely no idea how to go about eating it!? Recipe is below - what do think?
Ingredients:
- 4 mini chocolate chip Panettone
- 300ml double cream
- 200g soft cheese
- 100g icing sugar
- Juice of 2 clementines
- Zest of 1 clementine
- A handful of walnut halves roughly chopped
- Mixed peel to decorate
Instructions:
- Place Place the double cream and soft cheese in a mixing bowl. Stir until combined.
- Add the orange juice, zest and sieve in the icing sugar.
- Use a hand blender to whisk for a minute or two until you have a thick cream.
- Slice the Panettone widthways into 4 layers.
- Spread a thick layer of cream between each layer, finishing with a dollop of cream on top.
- Decorate the tops with the chopped walnuts and mixed peel.
