Love it! Mince Pie Cheesecake We had this on Christmas

Mince Pie Cheesecake We had this on Christmas Eve last year and everybody loved it!. There's no baking needed and just 6 ingredients. So easy, you can get the kids involved. oh, and you can make it the day before. I think it would work making little individual ones in ramekins (leftover Gü pots) so I might give that a try this year!

Ingredients:
  • 12 shortbread biscuits (215g)
  • 35g butter (melted)
  • 411g jar of mincemeat (vegetarian)
  • 130ml boiling water

Ingredients Filling:
  • 600g soft cheese
  • 120g icing sugar
  • 300ml double cream

Ingredients Topping:
  • 45g mincemeat (reserved from the 411g jar)
  • 1 tbsp boiling water
  • 1 tsp icing sugar
  • 2 shortbread biscuits
Instructions:
  1. Place 215g shortbread biscuits in a large bowl. Use the end of a rolling pin or a pestle to crush the biscuits to an even crumb.
  2. Pour over the melted butter and stir thoroughly until all the crumbs are coated.
  3. Line the bottom of a spring-form cake tin, approximately 23cm across with baking paper.
  4. Spread the biscuit mix evenly over the bottom of the tin, pressing it down firmly with the back of a spoon - especially around the edges.
  5. Tip the contents of the mincemeat into a bowl (reserving 45g for the drizzle)
  6. Mix the mincemeat with 130ml boiling water. Spread the mincemeat evenly over the biscuit crumb. Place the cake tin in the fridge for an hour.
  7. Place the soft cheese in a mixing bowl and sieve in 120g of icing sugar. Use a hand whisk and mix for 2 minutes until combined.
  8. In a separate bowl, whisk the double cream until it thickens into soft peaks. Gently tip the cream into the soft cheese and use a spatula or wooden spoon to fold them together until combined.
  9. Pour the cream filling into the cake tin and smooth the top so that it's level. Place in the fridge for at least two hours.
  10. Mix the remaining 45g mincemeat with 1tsp icing sugar and 1 tbsp boiling water until combined. Drizzle the mincemeat over the top in rough lines.
  11. Roughly crumble two shortcake biscuits to a crumb and sprinkle over the top.
  12. Store in the fridge
